  • Chicken (1lb)
  • Olive Oil (2tbsp)
  • Garlic Powder (1/2tsp)
  • Salt and Pepper
  • Chicken Broth (3 ½ Cups)
  • Butter (1/2 Cups)
  • Fresh Garlic (2tbsp, minced)
  • Rice (1 ½ Cups)
  • Parmesan Cheese (1/2 Cup)
  • Dry White Wine (1/2 Cup)
  • Red Chili Flakes (1/4tsp)
  • Parsley (for Sprinkling, Optional)


You can make this enchanting recipe by following only four given below steps. 

  1. Prepare the Chicken Scampi

Take your chicken fillets in a bowl and season them. You need salt, pepper, and garlic powder for seasoning. Leave it for around 30 minutes to marinate.

In your Dutch oven or nonstick skillet, warm olive oil in medium heat. Take your marinated chicken and fry the haunches. Cook it until it has done and appears golden brown

When the chicken haunches are done, remove them from the Dutch oven or skillet and shawl them in the foil. Keep aside

  • Prepare the Sauce for Chicken Scampi Rice

In your skillet, toss the butter and let it melt. When the butter melts, add garlic, chili flakes, and salt. Stir-fry the garlic until light brown or transparent. Be careful while sautéing the garlic, don’t over-fry it.

  • Prepare Rice to Go with Chicken Scampi

Drop your rice in the skillet of sauce and stir it. Let it cook until the rice begins to brown just a small. It will take hardly 3 to 4 minutes. 

Now add chicken broth, stir evenly and bring it to a boil. Lessen the heat to medium-low and cover your skillet. Rice needs 20 minutes to get tenderized. Mix in between but don’t mix too much. 

(Note: We know rice soaks stocks unevenly. So take care of it and add or lessen the amount of stock where needed. Also, don’t stir the rice and sauce mixture after 15 minutes of cooking. It will make your rice musty)

  • Time for Plating and Finishing

When the rice is done, remove the lid and toss parmesan on the rice. Put garlic chicken scampi on the top and pour the remaining 2tbsp sauce. 

You can sprinkle parsley over the dish to make it look more refined but it’s up to you. We suggest you dust the chicken scampi rice with parsley, it will give a healthy taste and a perfect look. Scatter some parmesan on the top and serve it.
